Our fresh meat counter is serviced with fresh meat cuts daily. Nueces Country Smokehouse does not alter our ground beef or add any preservatives. It is ground fresh daily to ensure you get the best ground beef possible. For a sensational breakfast, pan sausage in our counter at all times. If you don’t see what you need or want in our fresh meat counter we will custom cut or order if for you. If you are on your way in to the deer lease call us ahead of time and we will have your fresh steaks ready as you drive through town. We also offer custom cut beef, pork and chicken for your freezer.

Preheat grill on high. Lightly oil and season steaks and grill as indicated below. Allow meat to rest 3 to 5 minutes before serving or cutting to preserve juices.

Back in the day when Indians and early settlers roamed the hill country, cattle, deer and hogs were plentiful. They had all the meat needed to sustain their families. Without refrigeration they relied on century old methods of drying and smoking the meats flavoring them with wonderful warm spices. We have continued that culture using methods that focus on food safety utilizing quality meats and only natural preservatives, casings and spices. In our sausage making we do not use any filler.
